Snack Mix - IC safe and Gluten Free

Try this easy Snack mix.  Sometimes I make it without the cereal too.  It all depends on what kind of mood you are in.  Enjoy.



                    
Snack Mix

Serving Size: 36

FOR TOASTED CEREAL:
1/4 cup agave nectar
1/4 cup unsalted butter -- melted
1/4 teaspoon ground cardamom
1 teaspoon vanilla
8 cups  GF cereal -- any unsweetened variety without problem ingredients.  I use an additive free Rice Chex like cereal.

FOR TOASTED SEEDS & NUTS
1 cup raw cashew
1 cup raw pumpkin seeds -- (pepitas)
1 teaspoon canola oil
            
REST OF INGREDIENTS:
1 cup dried blueberries -- without problem ingredients
1 cup white chocolate chips -- or chunks made with real cocoa butter and without problem ingredients.

Preheat oven to 350 degrees F.  In a small bowl, mix agave, melted butter, cardamom, and vanilla.  Toss together with cereal in a large bowl.  Spread out onto a Jelly Roll pan (cookie sheet with sides) and bake at 300 degrees for 30 minutes stirring about every 10 minutes.

At the same time toss cashews and pumpkin seeds with oil until evenly coated.  Spread on a Jelly Roll pan and bake at 300 degrees for 15 to 20 minutes stirring halfway through baking.  Bake until cashews are golden brown.

When pans are done remove from oven and allow to cool completely.

In a large bowl toss cooled cereal, nuts & seeds, blueberries and chips.  Store in an airtight bag until ready to serve.

1 serving = 1/3 cup; Yield: 12 cups

Per Serving: 147 Calories; 7g Fat (40.6% calories from fat); 2g Protein; 19g Carbohydrate; 1g Dietary Fiber; 3mg Cholesterol; 71mg Sodium.

  2. Unfortunately, I am sensitive enough to artificial vitamins (c & B's) that I can not have the enriched Rice or Corn Chex cereals. Just a warning to some of the other ICers....

  3. Faith - for this photo, I used a store brand which does have vitamins in it but it didn't have the preservatives that Rice Chex has. I think it was the Cub/Roundy's brand. I'm especially sensitive to preservatives & minerals, but can handle vitamins okay. Many ICers can't handle vitamins though so you have to read ingredients carefully.

    Anonymous - The mix is great without the cereal too and that is the way I usually make it. If you wanted too you could use the agave coating on the cashews and pumpkin seeds instead. Health food stores usually carry brands of GF cereals w/o vitamins added. Try Cheerio, a corn based or Rice Krispie like cereals from the health food store instead. Many are GF and have few or no additives which makes them safer for ICers.

  4. I have found by drinking water all throughout the day helps me with my IC. It is the only drink I allow myself to have. I am so sensitive to so many foods and drinks. I try eating everything in small portions and if I have a flare up it isn't so severe. I feel my best when my stomach is not full.

  5. Is there such a thing as an acid free tomato? if anyone knows of any please let me know. I miss eating them so much!

  6. Anonymous - I don't think there is such a thing as an acid free tomato, but there are low acid tomatoes. White or yellow tomatoes are lower in acid - white being the lowest. I can eat these in very small quantities. I bought 4 plants from amazon.com and they seem to be growing well. I can't wait to try them. If you have no space to grow tomatoes, try your local farmers market. I am sometimes able to find them there.
